We love the depth of flavour in this bar. The epitome of dark chocolate. It’s our favourite.
The cacao inside this chocolate is the Trinitario varietal. We settled on a cooler roast profile to capture notes of honey, grape and toasted walnut.
We hand sort, roast, crack, winnow and stone grind for up to 80 hours before ageing our chocolate. We then temper, mold and hand-wrap each bar in our little factory in Wellington, New Zealand.
